Apricot Toes
Buy dried Turkish apricots if you can find them, a small bag of organic almonds, a jar of fig and walnut jam from Corsica, a block of cream cheese, a small container of crème fraîche and a box of powdered sugar. Soften your cream cheese and mash well with a fork adding a tablespoon of crème fraîche and a sprinkling of powdered sugar. Add a bit more crème fraîche and sugar for texture and to taste until you have a nice frosting. With a small spoon, dress an apricot with the cream mixture, add a spot of fig jam and top this with an almond. Make one or several. Decorate the plate with fresh mint
